To make easy pumpkin pancakes, stir together 2 cups pancake mix, 1 1/2 cups water and 2/3 cup pure pumpkin puree in a mixing bowl. Ladle 1/4 cup batter at a time onto a hot griddle coated with nonstick spray. Cook until bubbles appear, and then flip over to finish.

Using a prepared pancake mix makes preparing pumpkin pancakes very simple. If you want to make the pancakes from scratch, however, mix together 1 1/4 cup flour, 2 tablespoons sugar, 2 tablespoons baking powder, and a 1/2 teaspoon each of cinnamon, ground ginger and salt in a mixing bowl. In another bowl, combine 1 egg, 1 cup milk, 6 tablespoons pure pumpkin and 2 tablespoons melted butter. Mix well, and then pour the wet ingredients into the dry ingredients. Mix the batter until fully moistened, but avoid overmixing, which can make the pancakes tough. Ladle the pancakes onto the hot griddle and cook as usual.

You can enhance pumpkin pancakes by adding additional ingredients to the batter. For chocolate pumpkin pancakes, add a 1/2 cup of chocolate chips to the batter, or add 1/4 cup pecans for pumpkin pecan pancakes. Aside from syrup, you can top the pumpkin pancakes with candied or plain pecans, cinnamon-flavored whipped cream, or cream cheese icing.
