To make banana walnut bread, sift 1 1/4 cups of flour, 1 teaspoon of baking soda and 1/2 teaspoon of fine salt into a medium bowl, and then set it aside. In another bowl, whisk together 2 large eggs and 1/2 teaspoon of vanilla extract, and set this aside, too. In a third bowl, cream 1 stick of room temperature butter with 1 cup of sugar until it becomes light and fluffy. Pour the egg mixture in slowly, stirring constantly, and then add 3 mashed, very ripe bananas.

Add the flour mixture and mix until just blended. Fold in 1/2 cup of toasted walnut pieces, and pour the batter into a greased 9-by-5-by-3-inch loaf pan. Place the pan into a preheated 350-degree-Fahrenheit oven. Bake for approximately 55 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
