An easy recipe for raisin bread combines flour, sugar, bran and salt with egg, oil and raisins soaked in water and baking soda. The mixture is then baked in clean recycled aluminum cans.

Easy Raisin Bread

This recipe yields three small loaves and takes just over an hour.

  • 1 cup., boiling water
  • 1 1/2 cups., raisins
  • 2 tsp., baking soda
  • 1 1/2 cups., all-purpose flour
  • 1 cup., sugar
  • 1/4 tsp., salt
  • 1 cup., crushed bran flakes
  • 1 large egg
  • 1/4 cup., vegetable oil

Step 1: Heat the oven to 350 F and liberally apply grease and flour inside three clean 15-oz. aluminum cans.

Step 2: Place the raisins and baking soda into a heatproof bowl and pour the boiling water onto them. Leave to cool.

Step 3: Sift the flour, sugar and salt into a mixing bowl and stir in the crushed bran flakes. In a separate bowl, beat the egg and oil together before combining with the dry ingredients. When the bowl of water with the raisins and baking soda has cooled, add its contents to the mixing bowl and stir.

Step 4: Fill the cans to a depth of about three-quarters full with the mixture and place on the lowest rack of the oven. Bake for up to 45 minutes or until an inserted toothpick comes out clean.

Step 5: Remove from the oven and allow to cool for at least 10 minutes before sliding a knife around the inside of the can to release the raisin bread.
