Taste of Home and Libby's both offer easy, flavorful pumpkin loaf bread recipes. Each recipe takes 20 minutes or less of hands-on preparation, with 13 ingredients or fewer. The Libby's recipe includes nuts as an optional topping, while Taste of Home provides a simpler spiced pumpkin bread recipe.

To make Libby's easy pumpkin loaf, combine 2 cups flour with pumpkin pie spice, 2 teaspoons baking powder, 1 teaspoon salt and 1/2 teaspoon baking powder. Stir in a 15-ounce can of pumpkin puree, 1/2 cup granulated sugar, 1/2 cup brown sugar and 1/2 cup evaporated milk. Add 1 large egg, 1 large egg white and 1 tablespoon vegetable oil. Mix the egg mixture into the pumpkin mixture.

Add the pumpkin mixture to the flour, stirring the ingredients together until the batter is moist. Pour the batter into a greased loaf pan, and sprinkle the top with 1/4 cup chopped nuts. Bake the loaf for approximately one hour at 350 F.

Alternatively, cream 1 cup softened butter with 3 cups sugar until it's fluffy before beating 3 eggs into the mixture. Add the dry ingredients, made by combining 3 cups flour with 3 teaspoons baking powder, 1 1/2 teaspoons baking soda and 4 1/2 teaspoons of spices. Beat one 15-ounce can of pumpkin puree into the batter and pour it into two greased loaf pans and bake the loaves for 60 minutes at 350 F.
