A good zucchini bread recipe from the Food Network combines all-purpose flour, nutmeg and cinnamon, nuts and grated zucchini. Another recipe adds a touch of orange zest.

Make good zucchini bread by separating the wet and dry ingredients. In one bowl, mix together 3 1/4 cups of all-purpose flour, 2 teaspoons of baking soda, 1 teaspoon each of ground nutmeg and cinnamon, 1 1/2 teaspoon of salt and 3 cups of sugar. In another bowl, beat together 4 eggs, 1 cup of vegetable oil, 1/3 cup of water, 1 teaspoon of lemon juice and 2 cups of grated zucchini. Gradually add the wet ingredients to the dry ingredients until they are thoroughly combined. Stir 1 cup of chopped walnuts or pecans into the batter, pour into two bread pans and bake the bread at 350 degrees for 60 minutes.
