To make a flavorful, basic sweet bread dough, combine 2 cups all-purpose flour, 1/4 cup sugar, 1 package quick-rise yeast and 1/2 teaspoon salt in a bowl. Heat 1/2 cup milk, 1/2 cup softened butter and 1/4 cup water in a saucepan until it reaches 120 to 130 degrees Fahrenheit.

Add the warmed milk mixture to the flour and yeast, mixing everything together until the dry ingredients are moistened. Add 1 egg and an additional 1 cup of flour. Beat the mixture until it forms a smooth dough. Shape the dough into a ball, cover the bowl, and let the dough rest for approximately 10 minutes.

To make Bon Appetit's master sweet dough, warm 2/3 cup whole milk, transfer it to a measuring cup, and stir in 1 tablespoon sugar. Sprinkle 1 3/4 teaspoons yeast over the top, whisking the mixture to combine the ingredients. Allow it to rest for five minutes before adding 2 large eggs.In the bowl of a stand mixer, combine 4 tablespoons sugar, 2 3/4 cups flour and 1 teaspoon salt.

Turn the mixer to low speed, and add the warm milk along with 1/2 cup softened butter. Mix the dough on medium speed for one minute, then on medium-high for five minutes.Brush the inside of a bowl with melted butter before placing the dough inside. Cover the bowl with plastic wrap, and let it rise for approximately 1 1/2 hours.
